    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil, then cover the pot and remove it from heat. Let the eggs sit for 12 minutes.

    Cool and Peel

    Transfer the eggs to an ice bath to cool for about 5 minutes. Once cooled, carefully peel the eggs.

    Prepare Filling

    Slice the eggs in half lengthwise and remove the yolks. Place the yolks in a bowl and mash them with a fork. Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper, mixing until smooth.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

    Garnish

    Sprinkle paprika on top and garnish with chives or parsley as desired.
