Caramelize the Onions
Slice the onion thinly. In a skillet, melt 1 tablespoon of butter over medium heat. Add the onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and browned, about 15-20 minutes. Set aside.

Prepare the Patties
In a bowl, season the ground chuck beef with salt and black pepper. Divide the mixture into 4 equal portions and shape each portion into a patty, about ¾ inch thick.

Cook the Patties
In the same skillet, melt the remaining tablespoon of butter over medium-high heat. Add the beef patties and cook for about 4-5 minutes on one side, until browned. Flip the patties, place a slice of cheese on top of each patty, and cook for another 4-5 minutes until the cheese has melted and the beef is cooked to your desired doneness.

Toast the Sourdough
While the patties are cooking, toast the sourdough bread slices in a separate pan or toaster until golden brown.

Assemble the Melt
Spread a generous amount of rémoulade sauce on one side of each toasted sourdough slice. Place a cheeseburger patty on top, followed by a portion of caramelized onions. Top with another slice of sourdough, sauce side down.

Serve
Cut the sandwiches in half, serve immediately while hot, and enjoy!
