Prepare the Chicken
In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add tomatillos and chicken thighs. Season with salt and pepper. Cover and simmer until chicken is cooked through, about 20 minutes. Remove chicken, shred it, and return to the pot with any remaining juices.

Prepare the Cream
In a small bowl, mix sour cream with crumbled cotija cheese and lime juice. Adjust seasoning with salt and pepper.

Fry the Eggs
In a non-stick skillet, fry the eggs sunny-side up until the whites are set but the yolks are still runny. Season with salt and pepper.

Assemble the Tostadas
On each corn tostada, layer shredded chicken, a generous scoop of spicy guacamole, and a drizzle of cotija cheese crema. Top with a fried egg and pickled red onions. Garnish with chopped cilantro.
