Cooking the Pasta

Boil the Pasta
In a large pot of salted boiling water, cook the Creste di Gallo pasta according to package instructions until al dente. Drain and set aside.
Making the Cheese Sauce

Prepare the Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes. Gradually whisk in the milk and bring to a simmer. Cook until thickened, about 5-7 minutes. Remove from heat and mix in jerk seasoning, cheddar cheese, and Monterey Jack cheese until melted and smooth.
Cooking the Shrimp and Sausage

Cook the Shrimp and Sausage
In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced Andouille sausage and cook for 3-4 minutes until browned. Add the shrimp and cook until they turn pink, about 2-3 minutes. Season with salt and pepper.

Combine Everything
In a large bowl, combine the cooked pasta, shrimp, sausage, and cheese sauce. Mix until everything is evenly coated.
Baking the Dish

Prepare for Baking
Preheat your oven to 375°F (190°C). In a separate bowl, mix together panko breadcrumbs, lemon zest, and remaining olive oil. Sprinkle this mixture over the pasta.

Transfer the mixture to a greased baking dish and bake for 20-25 minutes, or until the top is golden and crispy.
