Caramelize the Onions
In a skillet over medium heat, add a tablespoon of olive oil. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until onions are softened and caramelized, about 15-20 minutes. Add Marsala wine and cook for an additional 2 minutes, then remove from heat.

Prepare the Butternut Squash
In a mixing bowl, combine the sliced butternut squash with olive oil, salt, and black pepper. Toss to coat evenly.

Roast the Squash
Preheat the oven to 400°F (200°C). Spread the seasoned butternut squash on a baking sheet in a single layer. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.

Prepare the Marsala Cream
In a small saucepan, combine the heavy cream and the remaining tablespoon of Marsala wine. Simmer over low heat until slightly thickened, about 5 minutes. Remove from heat.

Assemble the Flatbread
On each piece of flatbread, spread a layer of the caramelized onions, followed by the roasted butternut squash. Sprinkle crumbled goat cheese and chopped herbs on top.

Bake the Flatbread
Place the assembled flatbreads on a baking sheet and bake in the oven at 400°F (200°C) for 8-10 minutes, or until the cheese is warmed and slightly melted.

Drizzle the Marsala cream over the flatbreads before serving. Enjoy!
