Prepare the Shrimp
In a large bowl, toss the rock shrimp with salt and cornstarch until well-coated.

Fry the Shrimp
Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, add the coated rock shrimp in batches and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Make the Sauce
In a separate bowl, mix together the Sriracha Kewpie mayonnaise and sweet chili sauce until combined.

Prepare the Garlic Crunch
In a small skillet, heat a tablespoon of oil over medium heat. Add minced garlic and cook until golden and fragrant, then stir in panko breadcrumbs and toast until crispy. Remove from heat.

Assemble the Dish
In a large bowl, toss the fried shrimp with the sauce mixture until well-coated. Serve immediately, garnished with garlic crunch and chopped green onions.
