Cook the Fettuccine

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Prepare the Shrimp

In a large skillet, heat the olive oil over medium-high heat. Sprinkle the blackening seasoning over the shrimp, coating evenly.

Cook the Shrimp

Add the seasoned shrimp to the hot skillet. Cook for 2-3 minutes on each side until the shrimp are cooked through and have a nice blackened color. Remove from the skillet and set aside.

Make the Alfredo Sauce

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

Combine Everything

Add the cooked fettuccine, blackened shrimp, and roasted cherry tomatoes to the skillet with the Alfredo sauce. Toss everything together until well-coated.

Serve

Divide the Blackened Shrimp Alfredo among plates and garnish with additional Parmesan cheese if desired. Enjoy!
