Prepare the mushrooms
Preheat your oven to 375°F (190°C). Clean the Portobello mushrooms with a damp cloth and remove the stems. Set the caps aside.
Cook the sausage
In a skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes.
Mix the filling
In a mixing bowl, combine the cooked sausage and garlic mixture with provolone cheese, Parmesan cheese, seasoned bread crumbs, chopped parsley, salt, and black pepper. Stir until well combined.
Stuff the mushrooms
Spoon the filling mixture evenly into each Portobello mushroom cap, pressing down gently to pack it in.
Top with mozzarella
Place slices of fresh mozzarella on top of the stuffed mushrooms.
Bake
Arrange the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20-25 minutes, until the mushrooms are tender and the cheese is bubbly and golden.
Serve
Remove from the oven, let cool for a few minutes, and serve warm. Enjoy your stuffed mushrooms!
