Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes, or until it becomes frothy.

  2. 2

    Mix the Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt until well combined.

  3. 3

    Combine Wet and Dry Ingredients

Make a well in the center of the flour mixture, then add the frothy yeast mixture and olive oil. Mix with a wooden spoon until a dough starts to form.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is sticky, sprinkle a little more flour as needed.

  5. 5

    Let the Dough Rise

Place the kneaded dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Flatbread Baking

  1. 6

    Preheat the Oven

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to warm up.

  2. 7

    Prepare the Dough for Baking

Once the dough has risen, punch it down gently to release air. Divide the dough into 4 equal pieces and shape each piece into a ball.

  3. 8

    Roll Out the Dough

On a lightly floured surface, roll each ball into a flatbread shape, about 1/4 inch thick. Transfer to a baking sheet or a pizza peel if using a stone.

  4. 9

    Add Toppings

Brush each flatbread with olive oil, sprinkle with minced garlic, fresh herbs, and sea salt.

  5. 10

    Bake the Flatbreads

Carefully transfer the flatbreads to the oven (or onto the hot pizza stone) and bake for 8-10 minutes, or until golden brown and puffed.

  6. 11

    Serve

Remove the flatbreads from the oven, let them cool slightly, then cut into pieces and serve warm.
