Method

Preparation

  1. 1

    Prepare the steak

Take the bone-in ribeye steaks out of the refrigerator and let them sit at room temperature for about 30-60 minutes before cooking. This helps them cook evenly.

  2. 2

    Season the steak

Generously season both sides of the ribeye steaks with kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the seasoning into the meat for better flavor. Drizzle olive oil over the steaks and rub it in as well.

Cooking

  1. 3

    Preheat the grill

Preheat your grill to high heat (about 450°F - 500°F or 232°C - 260°C). If using a grill pan, heat it over medium-high heat on the stove.

  2. 4

    Cook the steaks

Place the seasoned ribeye steaks on the hot grill or grill pan. Cook for about 4-5 minutes on one side without moving them to develop a nice crust.

  3. 5

    Flip the steaks

Flip the steaks using tongs and cook for another 4-5 minutes for medium-rare, or longer if you prefer them more done. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

  4. 6

    Add garlic and butter (optional)

During the last minute of cooking, add the garlic cloves and fresh asparagus to the grill. Place a pat of butter on each steak for added flavor.

Resting and Serving

  1. 7

    Rest the steaks

Once cooked to your liking, remove the steaks from the grill and let them rest for about 5-10 minutes. This allows the juices to redistribute.

  2. 8

    Serve

Slice the ribeye steaks against the grain and serve with the grilled garlic and asparagus on the side. Enjoy your meal!
