Method

Preparing the Filet

  1. 1

    Season the Filet

Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. Rub the filet with olive oil, then sprinkle salt and black pepper evenly on both sides.

  2. 2

    Heat the Pan

In a heavy skillet or cast-iron pan, heat over medium-high heat until hot. Add a tablespoon of olive oil to the pan and let it heat until shimmering.

Cooking the Filet

  1. 3

    Sear the Filet

Place the filet mignon in the hot pan and sear for about 4-5 minutes on one side until a nice crust forms. Avoid moving the meat around.

  2. 4

    Flip and Add Butter

Flip the filet over and add the butter and fresh rosemary to the pan. Cook for another 4-5 minutes for medium-rare, basting the filet with the melted butter and pan juices.

  3. 5

    Rest the Filet

Once the filet is cooked to your desired doneness, remove it from the pan and let it rest on a cutting board for about 5 minutes before slicing.

Serving Suggestions

  1. 6

    Plate the Filet

Slice the filet mignon against the grain and serve it on a plate. Optionally, serve with garlic mashed potatoes and steamed asparagus on the side.
