Method

Prepare Veal Parmigiana

    Prepare the Cutlets

    Season the veal cutlets with salt and pepper. Dredge each cutlet in flour, dip in beaten eggs, and coat with breadcrumbs.

    Fry the Cutlets

    In a large skillet, heat olive oil over medium-high heat. Fry the breaded cutlets for about 3-4 minutes on each side until golden brown. Remove and set aside.

    Add Sauce and Cheese

    In a baking dish, layer the fried cutlets, marinara sauce, mozzarella, and parmesan cheese. Bake in a preheated oven at 375°F (190°C) for 20 minutes or until the cheese is bubbly.

Roast Potatoes

    Prepare Potatoes

    Preheat the oven to 425°F (220°C). Cut the potatoes into wedges. Toss with olive oil, garlic powder, salt, pepper, and rosemary.

    Spread the potatoes on a baking sheet and roast for 30-35 minutes until golden and crispy, flipping halfway through.

Sauté Vegetables

    Chop zucchini, bell pepper, and carrot into bite-sized pieces. In a skillet, heat olive oil over medium heat.

    Sauté Vegetables

    Add the vegetables to the skillet, season with salt and pepper, and sauté for about 5-7 minutes until tender.
