Chicken Marsala

Method

Chicken Marsala

    Prepare the Chicken

    Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off the excess.

    Cook the Chicken

    In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook until golden brown, about 4-5 minutes per side. Remove from skillet and set aside.

    Sauté the Mushrooms

    In the same skillet, add the remaining butter and sliced mushrooms. Sauté until the mushrooms are browned and tender, about 5-6 minutes.

    Make the Sauce

    Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

    Combine and Serve

    Return the chicken to the skillet and simmer for another 10 minutes. Garnish with chopped parsley before serving.

Roasted Potatoes

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, garlic powder, and rosemary.

    Roast the Potatoes

    Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes or until golden and crispy, tossing halfway through.

    Prepare the Vegetables

    In a large skillet, heat olive oil over medium heat. Add mixed vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.
