Prepare the Crust

Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and continue to beat until well combined. Add vanilla extract and sour cream, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined. Avoid overmixing.

Bake the Cheesecake

Pour the cream cheese filling over the cooled crust in the springform pan. Bake for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

After cooling, cover the cheesecake and refrigerate for at least 4 hours or overnight. Before serving, run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan. Slice and enjoy!
