Prepare Pork Skin

Trim and Score

Pat the pork skin dry with paper towels. If not already cut into pieces, use a sharp chef's knife to cut the rind into roughly 1.5–2 inch squares or strips. Trim excess thick fat if present so a thin layer of fat remains attached (this helps crisping). Lightly score the skin side in a shallow crosshatch (do not cut through to the meat).

Dry and Salt Cure

Sprinkle the 1 tsp kosher salt evenly over the cut pieces and rub it into the scored side. Arrange pieces on a wire rack set over a baking sheet in a single layer, skin side up. Refrigerate uncovered for at least 4 hours or up to overnight to dry the surface; this step pulls moisture out and improves crispiness.

Optional Roast (for thicker skins)

If the pieces are thick or still floppy after drying, preheat oven to 250°F (120°C). Place the rack/baking sheet in the oven and roast for 30–60 minutes until the skins are drier and slightly tightened but not browned. Remove and let cool. This step is optional for already thin, dry skins.

Fry to Puff

Heat Oil

In a heavy-bottomed pot or deep fryer, pour enough neutral oil to give 2–3 inches of depth (about 1.5–2 cups for a small pot). Attach a thermometer and heat oil to 375°F (190°C). Maintain steady temperature — too cool and pieces will absorb oil, too hot and they can burn.

Fry in Batches

Working in small batches (do not overcrowd), carefully lower dried pork rind pieces into the hot oil using tongs. They will sizzle, shrink, and rapidly expand and puff within 10–30 seconds. Fry until fully puffed and lightly golden, about 15–45 seconds depending on thickness. Remove promptly with a slotted spoon or spider.

Drain and Season

Transfer fried pork rinds to a paper-towel-lined tray. While still hot, sprinkle the fine sea salt evenly over them so the salt adheres. If using chile-lime seasoning, dust with 1 tsp or to taste immediately after frying. Let rest for 1–2 minutes — they will crisp further as they cool.

Serve

Cut the limes in half or into wedges and place alongside the pork rinds. Encourage diners to squeeze fresh lime juice over individual pieces just before eating for bright acidity. Serve immediately while at peak crispness.

Storage note: Store completely cooled pork rinds in an airtight container at room temperature for up to 3 days; they lose peak crunch after that.
