Shrimp Ceviche

En un tazón pequeño o frasco con tapa, combine el aceite de oliva (3 tbsp), el jugo de lima (2 tbsp), el vinagre (1 tsp), la miel o agave (1 tsp), la mostaza Dijon (1/2 tsp), el ajo picado (1/2 tsp) y las hojuelas de chile (1/4 tsp) si las usa. Bata o agite vigorosamente hasta que el aderezo quede emulsionado y ligeramente espeso. Pruebe y ajuste de sal si lo desea.

Emulsionar

Escurra los palmitos (1 cup) y córtelos en rodajas de 1/4 pulgada si aún no están picados. Coloque en un colador para eliminar el exceso de líquido.

Lave y seque las hojas verdes (4 cups) y colóquelas en una ensaladera grande o en platos individuales.

Corte los tomates cherry (1 cup) por la mitad y agréguelos a la ensaladera.

Corte la cebolla roja (1/4 cup) en rodajas muy finas. Para suavizar su sabor, puede remojarlas 5 minutos en agua fría y escurrirlas antes de añadir.

Pele, retire el hueso y corte los aguacates (2 count) en cubos de aproximadamente 1 pulgada. Para evitar que se rompan, hágalo justo antes de mezclar para que mantengan su textura.

Pique el cilantro fresco (1/4 cup) y reserve para añadir al final.

En la ensaladera con las hojas verdes, añada los palmitos escurridos, los tomates cherry, la cebolla roja rebanada y la mitad del cilantro picado. Mezcle suavemente para distribuir los ingredientes sin machacar el aguacate.

Agregue los cubos de aguacate por encima y rocíe el aderezo preparado de manera uniforme sobre la ensalada. Use todo el aderezo o ajuste según su gusto.

Sazone con la sal (1 tsp) y la pimienta negra recién molida (1 tsp). Mezcle con movimientos suaves una o dos veces para incorporar; evite sobre mezclar para que el aguacate conserve su forma.

Espolvoree el resto del cilantro picado sobre la ensalada como guarnición. Si desea, agregue un toque extra de jugo de lima o unas hojuelas de chile al servir.

Sirva inmediatamente para disfrutar del aguacate en su mejor textura. Esta ensalada funciona como acompañamiento para pescados, mariscos o como plato ligero por sí sola.

Wash all produce. Pat dry. Thinly slice the red onion into half-moon slices. If you want milder onion flavor, soak the slices in cold water for 5 minutes, then drain and pat dry.

Prepare produce

Core and dice the tomatoes into roughly 1/2-inch pieces. Place in a medium bowl.

Finely chop the cilantro leaves and the seeded jalapeño (if using). Add both to the bowl with the tomatoes.

Halve each avocado lengthwise, remove the pit, and carefully peel (or scoop) the flesh. Cut each half into 6–8 slices or 1-inch cubes, depending on your preferred presentation. Place the avocado pieces gently into the bowl with tomatoes.

Prep avocados

If using a greens base, arrange 4 cups of romaine or mixed greens on a serving platter or divide among individual plates.

Assemble greens

Add the tomato-avocado-onion mixture over the greens (or into a serving bowl). Sprinkle the crumbled queso fresco (or feta) over the top. Add 1/4 teaspoon freshly ground black pepper and 1/2 teaspoon sea salt, but hold back a small pinch to adjust after dressing.

Combine salad components

In a small bowl or jar, whisk together 3 tablespoons extra-virgin olive oil, 2 tablespoons fresh lime juice, 1/2 teaspoon honey (if using), and 1/4 teaspoon ground cumin. Taste and adjust seasoning — add a pinch more salt or a squeeze more lime if desired.

If using a jar, secure the lid and shake vigorously until the dressing is emulsified and slightly thickened.

Pour the dressing evenly over the assembled salad. Gently toss once or twice to coat the avocado and tomatoes without breaking up the avocado pieces. Alternatively, serve the dressing on the side so diners can add to taste.

Taste and adjust final seasoning: add the reserved pinch of salt or more pepper as needed. Serve immediately to prevent the avocados from browning; if you must wait, squeeze a little extra lime over the avocado to slow oxidation.

Remove the flank or skirt steak from the refrigerator 30 minutes before cooking so it comes to room temperature. Pat dry with paper towels.

Bring steak to room temperature

Rub both sides of the steak with 1 tablespoon olive oil, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper.

Heat a cast-iron skillet or heavy-bottomed pan over high heat until smoking hot (about 4–5 minutes).

Add the steak to the dry hot pan (you can add a little oil if pan looks dry) and sear without moving for 3–4 minutes to develop a deep brown crust.

Flip and sear the second side for 3 minutes for medium-rare (internal temp ~130–135°F / 54–57°C). Adjust time for desired doneness.

Remove the steak to a cutting board and let rest 8–10 minutes to allow juices to redistribute.

Slice the steak thinly across the grain into 1/4-inch slices just before assembling the salad.

In a medium bowl, combine 1 cup mayonnaise, 2 minced garlic cloves, 2 minced anchovy fillets (or 1 tsp anchovy paste), 1 teaspoon Dijon mustard, 2 tablespoons fresh lemon juice, and 1 teaspoon Worcestershire sauce.

Whisk until smooth. While whisking, slowly drizzle in 2 tablespoons extra-virgin olive oil to emulsify the dressing.

Stir in 1 tablespoon finely grated Parmesan, 1 teaspoon freshly ground black pepper, and 1/2 teaspoon salt. Taste and adjust lemon, salt, or anchovy to your preference.

If you prefer a thinner dressing, whisk in 1–2 teaspoons water or more lemon juice to reach desired consistency.

Place 8 cups of washed, dried, and torn Romaine lettuce into a large bowl.

Add 1 cup croutons and about 3/4 cup of the shaved Parmesan. Reserve remaining Parmesan for topping.

Add 3–4 tablespoons of the prepared Caesar dressing to the greens and toss gently to coat. Add more dressing to taste but avoid overdressing.

Arrange the sliced rested steak over the dressed Romaine. Sprinkle the remaining Parmesan over the top and finish with 1/2 teaspoon freshly ground black pepper.

Garnish with lemon wedges and chopped parsley if using. Serve immediately so croutons remain crisp.

Remove steak from refrigerator 30–45 minutes before cooking so it comes to room temperature. Pat dry with paper towels. Season both sides evenly with kosher salt and freshly ground black pepper.

Bring steak to room temperature & season

Heat a heavy skillet (cast iron preferred) over high heat until very hot. Add 1 tablespoon olive oil and swirl to coat. Place steak in the pan and sear without moving for 2–3 minutes until a brown crust forms. Flip and sear the other side 2 minutes.

Sear and cook

Reduce heat to medium. Add 1 tablespoon butter, crushed garlic cloves and thyme/rosemary to the pan. Tilt pan slightly and spoon the melted butter and aromatics over the steak (baste) for 1–2 minutes to finish cooking to desired doneness (about 125°F/52°C for medium-rare).

Finish with butter and aromatics

Transfer steak to a cutting board and tent loosely with foil. Rest 8–10 minutes so juices redistribute. Reserve any pan juices and aromatics to drizzle over sliced steak if desired.

Slice steak thinly across the grain into strips about 1/4-inch thick. Keep warm while assembling salad.

In a medium bowl, mash the minced garlic and anchovy fillets to a paste with the back of a spoon or a mortar and pestle. Add the egg yolk, Dijon mustard, lemon juice and Worcestershire sauce, and whisk until combined.

Prepare base

While whisking vigorously, slowly drizzle in the 1/2 cup extra-virgin olive oil in a thin stream to create a thick, creamy emulsion. Alternatively, use an immersion blender: combine all ingredients except oil, then blend while slowly adding oil.

Emulsify

Fold in the 1/4 cup grated Parmesan. Season with 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust lemon, salt or anchovy to preference. If dressing is very thick, whisk in 1–2 teaspoons water to loosen.

Finish dressing

Place the torn romaine in a large bowl. Add about 3–4 tablespoons of the Caesar dressing and toss gently to coat evenly. Add more dressing to taste; you want a light but even coating.

Toss lettuce with dressing

Add croutons and half of the shaved Parmesan to the dressed romaine and toss lightly to combine.

Assemble

Arrange the sliced steak over the dressed romaine. Sprinkle the remaining shaved Parmesan and a crack of freshly ground black pepper over the top. Drizzle a little of the reserved pan juices over the steak if you like.

Top with steak

Garnish with chopped parsley and serve with lemon wedges on the side for squeezing. Serve immediately while steak is warm and lettuce is crisp.

En un mortero, machaca el ajo con una pizca de sal hasta formar una pasta fina. Añade las anchoas picadas y sigue machacando hasta que estén casi deshechas.

Preparar la base

En un bol pequeño, bate la yema de huevo con la mostaza Dijon, el jugo de limón y la salsa Worcestershire hasta integrar.

Añade la pasta de ajo y anchoas al bol con la mezcla de yema. Bate suavemente mientras incorporas el aceite de oliva en un hilo fino y constante para emulsionar la salsa hasta obtener una textura cremosa y brillante.

Incorpora el queso parmesano rallado, prueba y ajusta de sal y pimienta. Si la salsa queda muy espesa, agrega 1 tsp de agua fría o más jugo de limón para ajustar la consistencia. Reserva refrigerado hasta el montaje (máx. 1 hora).

Precalienta el horno a 200 °C (390 °F).

En un bol, mezcla los cubos de pan con 1 tbsp de aceite de oliva, ajo en polvo (o ajo machacado), 0.25 tsp de sal y 0.25 tsp de pimienta hasta que estén bien cubiertos.

Distribuye los cubos en una sola capa sobre una bandeja de horno forrada con papel. Hornea 8–12 minutos, moviendo una vez a la mitad, hasta que los croûtons estén dorados y crujientes. Deja enfriar.

Saca la carne del refrigerador 20–30 minutos antes de cocinar para que tome temperatura ambiente. Seca con papel de cocina y sazona por ambos lados con 1 tsp de sal y 0.5 tsp de pimienta.

Calienta una sartén grande (preferiblemente de hierro) a fuego medio-alto hasta que esté muy caliente. Añade 1 tbsp de aceite de oliva y coloca la carne. Cocina 3–4 minutos por lado para término medio (dependiendo del grosor), o hasta alcanzar el punto deseado (usa un termómetro: 55–58 °C para medio).

Retira la carne de la sartén y deja reposar sobre una tabla cubierta con papel aluminio 5–7 minutos para redistribuir jugos. Corta la carne en tiras finas, en contra de la fibra.

En una ensaladera grande, coloca las hojas de lechuga romana cortadas o enteras según preferencia.

Añade 3–4 tbsp del aderezo César y mezcla suavemente con las manos o pinzas para que la lechuga quede bien cubierta. Ajusta la cantidad de aderezo al gusto (puedes añadir más).

Distribuye las tiras de carne calientes sobre la lechuga aderezada.

Agrega los croûtons y espolvorea 2 tbsp adicionales de queso parmesano rallado por encima.

Sirve inmediatamente para que la lechuga esté crujiente y la carne aún caliente.

En un bol mediano mezcla 2 tbs de aceite de oliva, 1 tbs de jugo de limón, 1 tsp de ajo picado, 0.5 tsp de mostaza Dijon, 1 tsp de sal y 0.5 tsp de pimienta. Añade las pechugas de pollo y cubre bien. Deja marinar mínimo 20 minutos a temperatura ambiente o hasta 2 horas en el refrigerador.

Marinar el pollo

Calienta una sartén grande o parrilla a fuego medio-alto. Retira el exceso de marinada y cocina las pechugas 5–7 minutos por lado (dependiendo del grosor) hasta que alcancen 74 °C (165 °F) en el centro y estén doradas. Deja reposar 5 minutos y corta en tiras o láminas.

Cocinar el pollo

En un bol pequeño o vaso para batir coloca 1 yema de huevo (o 1 tbs de mayonesa para evitar huevo crudo), 0.5 diente de ajo picado, 2 filetes de anchoa picados, 2 tbs de jugo de limón, 1 tsp de mostaza Dijon y 0.5 tsp de salsa Worcestershire. Bate hasta integrar. Mientras bates continuamente, agrega poco a poco 6 tbs de aceite de oliva extra virgen hasta emulsionar y obtener una textura cremosa. Incorpora 0.5 cups de queso parmesano rallado y ajusta con 0.25 tsp de sal y 0.25 tsp de pimienta. Prueba y rectifica acidez o sal si es necesario.

Preparar el aderezo

Precalienta el horno a 200 °C (400 °F). En un bol mezcla 2 cups de cubos de pan con 2 tbs de aceite de oliva, 0.25 tsp de sal y 0.25 tsp de pimienta hasta cubrir. Extiende en una bandeja y hornea 8–12 minutos, removiendo a mitad de cocción, hasta que estén dorados y crujientes. Deja enfriar.

Hacer los croutons

En una ensaladera grande coloca la lechuga romana troceada. Añade aproximadamente la mitad del aderezo y mezcla con las manos o tenedores grandes para cubrir uniformemente (puedes añadir más aderezo al gusto). Incorpora los croutons y la mitad del queso parmesano rallado. Coloca encima las tiras de pollo tibias. Termina con lascas o más parmesano rallado y, si deseas, un toque extra de pimienta negra.
