Main Ingredients

Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the onion, green pepper, tomato, and slice the mushrooms. Set aside. Chop the spinach and set aside.

  2. 2

    Cook the Bacon

In a large skillet, cook the Applewood smoked bacon over medium heat until crispy. Remove from the skillet and place on a paper towel to drain excess fat.

  3. 3

    Sauté Vegetables

In the same skillet, using the bacon drippings, add the diced onion, green pepper, and mushrooms. Sauté until the vegetables are soft, about 5-7 minutes. Add the chopped spinach and diced tomato, cooking for an additional 2 minutes. Remove from heat.

Cooking Eggs and Assembly

  1. 4

    Fry the Eggs

In a separate non-stick skillet, fry the eggs sunny-side up or as desired. Season with salt and pepper to taste.

  2. 5

    Assemble the Burrito

Spread 1/4 cup of herbed cream cheese on each tortilla. Layer with sautéed vegetables, 2 slices of bacon (crumbled), 1 fried egg, and 1/2 cup of cheddar cheese.

  3. 6

    Roll the Burrito

Carefully roll the tortilla tightly from one end to the other, folding in the sides to secure the filling. Repeat with the second tortilla.

  4. 7

    Heat the Burrito

Place the rolled burritos seam side down in the skillet over medium heat. Cook for about 2-3 minutes on each side until the tortillas are golden brown and the cheese is melted.
