Cook the Bacon
In a large skillet, cook the Applewood smoked bacon over medium heat until crispy. Remove from the skillet and place on a paper towel to drain excess fat.

Cooking Eggs and Assembly

Fry the Eggs
In a separate non-stick skillet, fry the eggs sunny-side up or as desired. Season with salt and pepper to taste.

Assemble the Burrito
Spread 1/4 cup of herbed cream cheese on each tortilla. Layer with sautéed vegetables, 2 slices of bacon (crumbled), 1 fried egg, and 1/2 cup of cheddar cheese.

Roll the Burrito
Carefully roll the tortilla tightly from one end to the other, folding in the sides to secure the filling. Repeat with the second tortilla.

Heat the Burrito
Place the rolled burritos seam side down in the skillet over medium heat. Cook for about 2-3 minutes on each side until the tortillas are golden brown and the cheese is melted.
