Preparation

    Prep the Spinach

    Wash the fresh spinach thoroughly under cold water to remove any dirt. Drain and squeeze out excess moisture, then chop coarsely.

    Caramelize the Onions

    Peel and finely chop the onions. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onions and cook for about 10-15 minutes, stirring frequently, until they are golden brown and caramelized.

    Mince the Garlic

    While the onions are caramelizing, peel and mince the garlic cloves.

Cooking

    Cook Spinach

    In the same skillet with the caramelized onions, add the chopped spinach and minced garlic. Cook for about 5 minutes until the spinach is wilted and any excess moisture has evaporated. Remove from heat and let cool slightly.

    Combine Ingredients

    In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, shredded mozzarella cheese, and parmesan cheese. Mix until smooth and creamy.

    Add Seasoning

    Add the cooked spinach and onion mixture to the cheese mixture. Season with salt, black pepper, and red pepper flakes. Mix well until all ingredients are evenly incorporated.

Baking

    Bake the Dip

    Preheat your oven to 350°F (175°C). Transfer the spinach dip mixture into a baking dish and spread evenly. Bake in the preheated oven for 25-30 minutes until the top is bubbly and golden.

Serving

    Remove the spinach dip from the oven and let it cool slightly before serving. Serve warm with tortilla chips for dipping.
