Prepare the Apples
Wash and core the Honeycrisp apples. Cut them into quarters and place them in a large pot.

Cook the Apples
Add 4 cups of water to the pot with the quartered apples. Bring to a boil over medium heat, then reduce to a simmer for about 30 minutes, until the apples are soft.

Strain the Juice
Once the apples are soft, strain the mixture through a fine-mesh sieve or cheesecloth into a large bowl to extract the juice. Discard the solids.

Cool the Mixture
Allow the juice mixture to cool to room temperature.

Fermentation
Once the mixture is cool, transfer it to a fermentation vessel and sprinkle the yeast over the top. Seal the vessel with an airlock and let it ferment in a cool, dark place for 1-2 weeks.

Prepare Bottles
Clean and sanitize your bottles and caps before bottling the cider.

Bottle the Cider
Using a siphon or funnel, carefully transfer the fermented cider into the bottles, leaving about an inch of headspace at the top of each bottle.

Cap and Store
Cap the bottles securely and store them in a dark, cool place for another 1-2 weeks to carbonate.

Chill and Serve
Once carbonated, chill the bottles in the refrigerator and serve chilled. Enjoy your smooth Honeycrisp hard cider!
