For the Biscuits

Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it’s hot enough for baking the biscuits.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently with a fork until just combined. Do not overmix; the dough should be a bit shaggy.

Shape the Biscuits
Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Fold it over onto itself two or three times to create layers, then cut into rounds using a biscuit cutter.

Bake the Biscuits
Place the biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes or until golden brown.

Cook the Sausage and Bacon
In a large skillet over medium heat, add the breakfast sausage and cook until browned. Add the chopped bacon and cook until crispy. Drain excess fat if necessary, leaving about 2 tablespoons in the skillet.

Add Flour
Sprinkle the flour over the sausage and bacon mixture. Stir to coat the meat and cook for about 1 minute to remove the raw flour taste.

Add Milk
Gradually add the milk, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until the gravy thickens, about 5-7 minutes.

Season the Gravy
Add salt and black pepper to taste. Stir well and adjust the seasoning as necessary.

Serve
Once the biscuits are baked and the gravy is ready, split the biscuits in half, ladle the gravy over the top, and garnish with chopped chives.
