Method
Preparation
- 1
Prepare the Vegetables
Wash and slice the cucumbers, carrots, and radishes into thin rounds or sticks as preferred. Peel the garlic cloves.
- 2
Make the Brine
In a medium saucepan, combine water, white vinegar, salt, sugar, black peppercorns, and red pepper flakes. Bring the mixture to a boil, stirring until the salt and sugar dissolve.
- 3
Pack the Jars
In clean, sterilized jars, layer the sliced vegetables and garlic cloves. Pack them tightly but leave some space at the top.
- 4
Add the Brine
Pour the hot brine over the packed vegetables in the jars, ensuring that the vegetables are fully submerged. Leave about 1/2 inch of headspace at the top of each jar.
- 5
Add Dill
Add fresh dill sprigs to each jar, pressing down lightly to ensure they are submerged.
- 6
Seal and Cool
Seal the jars with lids and let them cool to room temperature. Once cooled, refrigerate the pickles.
- 7
Pickling Time
Allow the pickles to marinate in the fridge for at least 24 hours before serving. For best flavor, let them sit for 3-5 days.
