1. Prepare the Broth
In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
2. Add Broth and Seasoning
Pour in the chicken broth and soy sauce. Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes.
3. Cook the Noodles
In a separate pot, cook the ramen noodles according to package instructions. Once cooked, drain and set aside.
4. Combine Ingredients
Add the sliced mushrooms and spinach to the broth, cooking for an additional 5 minutes until the spinach wilts.
5. Assemble the Ramen
In serving bowls, divide the cooked noodles and ladle the hot broth with vegetables over them. Top with chopped green onions, soft-boiled eggs, and nori sheets.
6. Add Spice
Drizzle with chili oil to taste, and serve hot.
