    Prepare the Rice

    In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Make Miso Butter

    In a small bowl, mix together softened butter and miso paste until well combined. Set aside.

    Cook the Vegetables

    In a large skillet over medium heat, melt 1 tablespoon of miso butter. Add sliced onions and cook until translucent. Add mushrooms and cook until softened. Add chopped cabbage and cook until wilted. Season with salt and pepper to taste. Remove from skillet and set aside.

    Cook the Salmon

    In the same skillet, add the remaining miso butter. Place salmon fillets skin-side down and cook for about 4-5 minutes on each side or until cooked through and flaky. Season with salt and pepper.

    Serve

    To serve, place a portion of rice on each plate, top with the sautéed vegetables, and finish with a salmon fillet on top. Enjoy your Salmon Chanyaki!
