    Prepare the Broth

    In a large pot, combine the pork bones, water, ginger, garlic, salt, and pepper. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for at least 4 hours, skimming any impurities that rise to the surface.

    Season the Broth

    After 4 hours, strain the broth to remove the solids. Return the liquid to the pot and add soy sauce and mirin. Allow it to simmer for an additional 30 minutes.

    Cook the Noodles

    In a separate pot, bring water to a boil. Add ramen noodles and cook according to package instructions. Drain and set aside.

    Assemble the Ramen

    In serving bowls, add a portion of the cooked ramen noodles. Ladle the hot pork broth over the noodles. Top with slices of chashu pork, chopped green onions, and nori sheets.
