Musubi Preparation

    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, usually in a rice cooker or on the stove with the appropriate water-to-rice ratio.

    Prepare the Seasoning

    In a small bowl, mix together the rice vinegar, sugar, salt, and sesame oil until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the seasoning.

    Prepare the Spam

    Slice the Spam into 8 equal rectangles. In a skillet over medium heat, cook the Spam slices until browned and crispy on both sides, about 3-4 minutes per side. Drizzle with soy sauce and mirin, cooking for an additional minute.

    Assemble the Musubi

    To assemble, lay a sheet of nori on a clean surface, shiny side down. Place a small amount of seasoned rice in the center, then add a slice of Spam on top. Add another layer of rice and fold the nori over to encase the filling. Use a little water to seal the edges if needed.

    Cut and Serve

    Using a sharp knife, cut the musubi into bite-sized pieces. Sprinkle with black sesame seeds for garnish. Serve immediately or wrap in plastic wrap for later.
