Mochi Ice Cream Directions

    Prepare the Ice Cream

    Scoop the ice cream into small balls (about 1-2 tablespoons each) and place them on a parchment-lined baking sheet. Freeze the ice cream balls for at least 1 hour or until firm.

    Make the Mochi Dough

    In a microwave-safe bowl, combine the sweet rice flour, sugar, and water. Mix until smooth. Optionally, add food coloring to the mixture for color.

    Cook the Mochi

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then cover and microwave for another minute. Stir again and microwave for an additional 30 seconds until the dough is sticky and slightly translucent.

    Dust with Cornstarch

    On a clean surface, sprinkle cornstarch generously to prevent sticking. Transfer the mochi dough onto the cornstarch-dusted surface and dust the top with more cornstarch.

    Form the Mochi Wrappers

    Using your hands or a rolling pin, flatten the mochi dough into a sheet about 1/4 inch thick. Cut into squares that are large enough to wrap around the ice cream balls.

    Assemble the Mochi Ice Cream

    Take a square of mochi dough, place an ice cream ball in the center, and fold the dough around the ice cream, pinching the edges to seal. Repeat with remaining ice cream and mochi dough.

    Freeze

    Place the finished mochi ice cream back on the parchment-lined baking sheet and freeze for at least 2 hours until firm. Serve and enjoy!
