    Prepare the Pork Meatballs

    In a mixing bowl, combine ground pork, soy sauce, salt, and pepper. Mix well and form into small meatballs, about 1 inch in diameter.

    Cook the Meatballs

    Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 8-10 minutes. Remove from the heat and set aside.

    Blanch the Rapini

    In a pot of boiling salted water, blanch the rapini for 2-3 minutes until bright green and tender. Drain and set aside.

    Cook the Ramen Noodles

    In the same pot of boiling water, cook the ramen noodles according to package instructions. Drain and set aside.

    Prepare Crispy Garlic

    Thinly slice the garlic cloves. In a small pan, add a bit of oil and heat over low heat. Add the garlic and cook until golden brown and crispy. Remove from the pan and drain on paper towels.

    Assemble the Dish

    In serving bowls, place a portion of ramen noodles, topped with pork meatballs, blanched rapini, crispy garlic, and a drizzle of chili oil. Garnish with sliced scallions.
