Prepare the cabbage
Cut the Napa cabbage in half lengthwise, then crosswise into 1-inch pieces. Place in a large bowl and sprinkle with salt. Massage the salt into the cabbage and let it sit for 1-2 hours until wilted.

Make the kimchi paste
In a bowl, combine the minced garlic, grated ginger, gochugaru, fish sauce, and sugar. Mix until a paste forms.

Combine vegetables
After the cabbage has wilted, rinse it under cold water to remove excess salt. Drain well. In a large mixing bowl, combine the cabbage, Korean radish, carrots, green onions, and kimchi paste. Mix thoroughly, using your hands (wear gloves) to ensure even coating.

Ferment
Seal the jar and let it sit at room temperature for 1-2 days to ferment. Afterward, refrigerate the kimchi to slow down the fermentation.
