Preparation Instructions

Roasting the Pork Belly
Preheat your oven to 180°C (350°F). Score the skin of the pork belly and season with salt and pepper. Roast for 1.5 hours until the skin is crispy and the meat is tender.

Preparing Broths
In separate pots, heat the pork broth, chicken broth, and vegetable broth over medium heat until simmering. Keep warm.

Cooking Meatballs
In a skillet, cook the local pork meatballs over medium heat for about 10-12 minutes until browned and cooked through.

Preparing Smoked Chicken
Shred the smoked chicken into bite-sized pieces.

Cooking Noodles
In a large pot of boiling water, cook the ground pork kae-dama noodles and rice noodles according to package instructions. Drain and set aside.

Assembly
In bowls, layer the noodles, add the assorted meats (roasted pork belly, meatballs, smoked chicken, shredded smoked pork, and NC catfish kamaboko). Pour hot broth over the top and finish with spicy chili butter, sautéed mushrooms, and a drizzle of housemade hot sauce.
