Prepare the Ribeye
Bring the ribeye to room temperature for about 30 minutes before cooking. This allows for even cooking.

Season the Meat
Rub the ribeye with olive oil, then season generously with kosher salt and black pepper on both sides.

Prepare the Grill
Preheat your woodfired grill to a high temperature, around 500°F (260°C). If using wood chips, soak them in water for 30 minutes before adding to the fire.

Cook the Ribeye
Place the ribeye on the grill and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

Add Flavor
During the last few minutes of cooking, add fresh rosemary and crushed garlic cloves to the grill for added flavor.

Rest and Serve
Remove the ribeye from the grill and let it rest for 5-10 minutes before slicing. Serve with your choice of sides.
