Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Make the Rub
In a bowl, mix together smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Rub this mixture all over the pork pieces.

Sauté Vegetables
In a large skillet, sauté the chopped onion and minced garlic until softened. This should take about 5 minutes.

Slow Cook the Pork
Add the sautéed onion and garlic to a slow cooker. Place the pork on top, then pour in apple cider vinegar and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork and shred it with two forks. Return shredded pork to the slow cooker and mix with the juices.

Serve
Serve the pulled pork on buns with BBQ sauce drizzled on top.
