Prepare the Onions
Peel the sweet onions and slice them into thick rings, about 1/2 inch thick. Carefully separate the rings and set them aside.

Make the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, whisking until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil with a small drop of batter; if it sizzles and rises to the surface, it's ready.
