    Prepare the Onions

    Peel the sweet onions and slice them into thick rings, about 1/2 inch thick. Carefully separate the rings and set them aside.

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, whisking until the batter is smooth and well combined.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil with a small drop of batter; if it sizzles and rises to the surface, it's ready.

    Fry the Onion Rings

    Dip each onion ring into the batter, allowing any excess to drip off. Carefully place the battered onion rings in the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Remove the fried onion rings with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot with ranch dressing for dipping.
