Flat Iron Pork Steak Recipe

    Brine the Pork

    In a large bowl, combine water, kosher salt, and brown sugar, stirring until dissolved. Submerge the pork flat iron steak in the brine and refrigerate for at least 2 hours, or up to overnight.

    Prepare the Seasoning

    In a small bowl, mix together black pepper, garlic powder, onion powder, and fresh herbs.

    Preheat the Grill

    Preheat your wood fire grill to medium-high heat.

    Season the Steak

    Remove the pork steak from the brine, pat dry with paper towels, and rub with olive oil. Generously coat the steak with the seasoning mix on both sides.

    Grill the Steak

    Place the seasoned pork steak on the grill and cook for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).

    Rest and Serve

    Remove the steak from the grill and let it rest for 5 minutes before slicing. Serve with your choice of two sides.
