Chardonnay Glazed Salmon Recipe

    Prepare the Rice and Broccoli

    Cook the rice according to package instructions. In a separate pot, steam the broccoli florets until tender.

    Make the Glaze

    In a saucepan over medium heat, combine chardonnay, Dijon mustard, salt, and black pepper. Simmer until reduced by half, about 10 minutes. Remove from heat.

    Prepare the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper.

    Grill the Salmon

    Place the salmon on the grill, skin-side down. Grill for about 6-8 minutes per side, or until cooked through and flaky.

    Sauté the Vegetables

    In a skillet, heat a little olive oil over medium heat. Add chopped onions and sauté until translucent. Add the sliced mushrooms and cook until they are tender. Stir in the bacon bits and cook for an additional 2 minutes.

    Once the salmon is grilled, drizzle the chardonnay glaze over the top. Serve the salmon with the sautéed mushrooms, onions, and bacon bits on top. Plate with rice and broccoli on the side.
