Start Roasting
Place the soaked wood chips in a smoker box or directly on the heat source. Place the chicken halves skin side up on the cooler side of the grill. Close the lid and roast for about 45 minutes, maintaining a grill temperature of around 275°F (135°C).

Finish on the Grill
After 45 minutes, brush the chicken generously with Darryl's BBQ sauce. Move the chicken to the hotter side of the grill and grill for an additional 10-15 minutes, turning occasionally and basting with more BBQ sauce, until the internal temperature reaches 165°F (74°C) and the skin is crispy.

Rest and Serve
Remove the chicken from the grill and let it rest for 5-10 minutes before serving. Serve with your choice of two sides.
