Preparing the Pork Rack

Preheat the Oven
Preheat your wood-fired oven to a high temperature (around 450°F or 232°C).

Roasting the Pork
Place the pork rack on a roasting rack in a baking dish and roast it in the wood-fired oven for about 45-60 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

Mash the Apples
Once cooked, use a potato masher or blender to puree the apple mixture until smooth. Set aside to cool slightly before serving.
Preparing Wilted Spinach

Sauté Garlic
In a large skillet, heat olive oil over medium heat. Add the sliced garlic and sauté until fragrant (about 1 minute).

Wilt the Spinach
Add the fresh spinach to the skillet. Cook, stirring frequently, until wilted (about 3-5 minutes). Season with salt and black pepper to taste.
