Fish Preparation

    Prepare the Trout

    Rinse the trout fillets under cold water and pat them dry with paper towels.

    Season the Trout

    Brush the fillets with olive oil, then sprinkle with salt and black pepper on both sides.

    Prepare Wood Chips

    Soak the wood chips in water for at least 30 minutes before smoking to prevent burning too quickly.

    Smoke the Trout

    Preheat your smoker to a temperature of 225°F (107°C). Add the soaked wood chips to the smoker and place the trout fillets on the grill grate. Smoke for about 1 hour, or until the internal temperature reaches 145°F (63°C).

Salad Preparation

    Segment the grapefruit and blood orange, removing the pith and seeds. Slice the avocado in half, remove the pit, and scoop out the flesh, slicing it into thin pieces.

    In a large bowl, combine the arugula, Boston Bibb lettuce, grapefruit, blood orange, avocado, and sunflower seeds.
