Preparing the Lamb Loin

Marinate the Lamb
In a bowl, combine the harissa paste, olive oil, salt, and black pepper. Rub this mixture all over the Australian lamb loin, ensuring it is well coated. Allow it to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for maximum flavor.

Grilling the Lamb
Preheat your wood fire grill to medium-high heat. Once hot, place the marinated lamb loin on the grill. Grill for about 4-5 minutes on each side or until it reaches your desired doneness (medium-rare is about 135°F or 57°C). Remove from the grill and let it rest for 5-10 minutes before slicing.

While the lamb is marinating, clean the field mushrooms with a damp cloth and slice them if large. Mince the garlic cloves.
