Preparing the Steak

    Chop the Beef

    Finely chop the beef tenderloin using a sharp knife. Ensure that the pieces are small enough to be easily mixed but large enough to retain some texture.

    Prepare Shallots and Chives

    Peel and finely dice the shallot. Chop the chives into small pieces. Set aside.

    Mix Main Ingredients

    In a mixing bowl, combine the chopped beef, capers, shallots, and chives. Gently mix until evenly distributed.

    Add Egg Yolk

    Create a small well in the center of the beef mixture and place the egg yolk in the well. Gently fold the yolk into the mixture until well incorporated.

Making the Bone Marrow Dressing

    Prepare Bone Marrow

    If using raw bone marrow, roast it in an oven at 200°C (400°F) for about 15-20 minutes until soft. Scoop out the marrow and place it into a small bowl.

    Mix Dressing Ingredients

    To the bowl of bone marrow, add olive oil, lemon juice, salt, and black pepper. Whisk together until smooth and creamy.

Serving

    Plate the Tartare

    Using a ring mold, carefully shape the steak tartare on a serving plate. Remove the mold and ensure the tartare is neatly presented.

    Drizzle Dressing

    Spoon the bone marrow dressing generously over the steak tartare.

    Garnish and Serve

    Garnish with additional chives if desired. Serve immediately with toasted bread or crackers.
