Preparation
- 1
Clean the Clams
In a large bowl, soak the manilla clams in cold water for about 30 minutes to help them expel any sand. Rinse them under running water and set aside.
- 2
Chop the Garlic and Parsley
Finely chop the garlic cloves and the fresh parsley leaves. Set them aside for later use.
Cooking
- 3
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.
- 4
Sauté Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and red chili flakes, sautéing for about 1-2 minutes until fragrant, but not browned.
- 5
Add Clams and Wine
Add the cleaned manilla clams to the skillet, followed by the dry white wine. Cover the skillet and let the clams steam for about 5-7 minutes, or until they open up. Discard any clams that do not open.
- 6
Combine Pasta and Clams
Once the clams are opened, add the drained spaghetti to the skillet. Toss everything together gently, adding reserved pasta water as needed to create a light sauce.
