Preparation of Vegetable Base

    Sauté the Aromatics

    In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Add Garlic and Bell Pepper

    Stir in the minced garlic and diced bell pepper. Cook for an additional 3-4 minutes until the bell pepper is softened.

    Incorporate Tomatoes and Spices

    Add the canned tomatoes, ground cumin, paprika, salt, and black pepper to the skillet. Stir well to combine and let it simmer for about 10 minutes until it thickens slightly.

Cooking Eggs

    Poach the Eggs

    Using a spoon, create small wells in the tomato mixture and gently crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are set but the yolks are still runny.

    Add Feta

    Sprinkle the crumbled feta cheese over the top of the dish and cover for another 1-2 minutes until the cheese is slightly warmed.

Preparing Sourdough

    Grill the Sourdough

    While the eggs are cooking, toast the sourdough slices on a grill or in a toaster until golden brown.

Serving

    Garnish and Serve

    Once the eggs are cooked, remove the skillet from heat. Garnish with chopped fresh parsley and serve hot with the grilled sourdough on the side.
