Fruit Puree Preparation

Prepare the Pears
Peel, core, and chop the ripe pears into small chunks.

Cook the Pears
In a medium saucepan, combine the chopped pears, brown sugar, and ground cinnamon. Cook over medium heat for about 10 minutes until the pears are soft and the mixture starts to caramelize.

Blend the Puree
Remove from heat and let it cool slightly. Transfer the mixture to a blender, add fresh lemon juice, and blend until smooth. Set aside to cool completely.

Combine Ingredients
In a large mixing pitcher, add the cooled pear puree and ground nutmeg. Stir well to combine.

Add Prosecco
Slowly pour in the prosecco to the mixture, stirring gently to mix without losing too much carbonation.

Serve
Pour the seasonal bellini into champagne flutes or cocktail glasses. Garnish with fresh mint leaves for added freshness.
