Method

Preparation of Vegetables

  1. 1

    Roasting the Bell Peppers

Preheat your oven to 400°F (200°C). Cut the red and yellow bell peppers in half, remove the seeds, and place them cut side down on a baking sheet.

  2. 2

    Roasting the Cherry Tomatoes

Add the cherry tomatoes to the baking sheet with the bell peppers. Drizzle with olive oil and season with salt and black pepper.

  3. 3

    Garlic Preparation

Peel the garlic cloves and add them whole to the baking sheet.

  4. 4

    Roasting

Roast the vegetables in the preheated oven for 25-30 minutes, until the bell peppers are tender and slightly charred.

Cooking Snapper

  1. 5

    Preparing the Snapper

While the vegetables are roasting, season the snapper fillets with salt and black pepper on both sides.

  2. 6

    Searing the Snapper

In a large skillet, heat olive oil over medium-high heat. Once hot, carefully place the snapper fillets in the skillet.

  3. 7

    Cooking Time

Cook the snapper for about 3-4 minutes on each side, or until the fish flakes easily with a fork and has a golden-brown crust.

Finishing Touches

  1. 8

    Combining the Ingredients

Once the vegetables are done roasting, remove them from the oven and toss them with fresh basil, parsley, and balsamic vinegar.

  2. 9

    Serving

Serve the seared snapper on a plate topped with the roasted bell peppers, tomatoes, and herbs mixture. Enjoy your meal!
