Preparation of Vegetables

Roasting the Bell Peppers
Preheat your oven to 400°F (200°C). Cut the red and yellow bell peppers in half, remove the seeds, and place them cut side down on a baking sheet.

Roasting the Cherry Tomatoes
Add the cherry tomatoes to the baking sheet with the bell peppers. Drizzle with olive oil and season with salt and black pepper.

Peel the garlic cloves and add them whole to the baking sheet.

Roast the vegetables in the preheated oven for 25-30 minutes, until the bell peppers are tender and slightly charred.

While the vegetables are roasting, season the snapper fillets with salt and black pepper on both sides.

In a large skillet, heat olive oil over medium-high heat. Once hot, carefully place the snapper fillets in the skillet.
