Preheat your oven to 425°F (220°C).

Wash and scrub the Yukon Gold potatoes thoroughly. Cut them into even-sized chunks, about 1 to 1.5 inches in size.

In a large mixing bowl, toss the potato chunks with olive oil and black lava salt until evenly coated.
Roasting the Potatoes

Arrange on Baking Sheet
Spread the seasoned potatoes in a single layer on a baking sheet, ensuring they are not overcrowded.

Roast the Potatoes
Roast in the preheated oven for 30-35 minutes, turning once halfway through, until golden brown and crispy.
Making the Garlic Aioli

Combine Ingredients
In a small bowl, combine mayonnaise, minced garlic cloves, lemon juice, salt, and black pepper.

Mix Together
Mix all the ingredients until smooth and creamy. Adjust seasoning to taste.
Serving

Plate the Dish
Once the potatoes are roasted to perfection, remove them from the oven and let them cool slightly.
