Preparing the Potatoes

Preheat the Oven
Preheat your oven to 425°F (220°C).

Wash and Cut Potatoes
Wash the fingerling potatoes thoroughly. Cut them in half lengthwise for even roasting.

Season Potatoes
In a large bowl, toss the halved fingerling potatoes with olive oil, salt, black pepper, and chopped fresh rosemary until well-coated.

Arrange for Roasting
Spread the seasoned potatoes in a single layer on a baking sheet, cut side down.

Roast the Potatoes
Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the potatoes are golden brown and crispy.
Making the Garlic Aioli

Combine Ingredients
In a mixing bowl, add the mayonnaise, minced garlic cloves, lemon juice, and salt.

Mix Well
Whisk the mixture until smooth and creamy. Adjust the salt to taste.

Cover and refrigerate the garlic aioli for at least 15 minutes before serving to allow the flavors to meld.
