Salad Preparation

Prepare the Radicchio
Remove the core of the radicchio and tear the leaves into bite-sized pieces. Rinse under cold water and spin dry in a salad spinner or pat dry with a clean kitchen towel.

Slice the Apple
Core the Honeycrisp apple and slice it into thin wedges. If desired, leave the skin on for added texture and color.
Cheese Preparation

Cut the Cheese
Cut the aged clothbound cheddar into small cubes or thin slices, depending on your preference.
Maple Vinaigrette Preparation

Make the Dressing
In a small bowl or jar, combine maple syrup, apple cider vinegar, olive oil, Dijon mustard, salt, and black pepper. Whisk or shake well until the dressing is emulsified and smooth.
Salad Assembly

Combine the Ingredients
In a large salad bowl, combine the prepared radicchio leaves, apple slices, and aged cheddar. Drizzle the maple vinaigrette over the salad.

Using salad tongs or your hands, gently toss the salad to combine all ingredients evenly and ensure the vinaigrette coats the salad.
