Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking.
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, granulated sugar, ground ginger, ground cinnamon, and ground nutmeg until well combined.
Cream Butter and Honey
In a separate bowl, use an electric mixer to cream together the unsalted butter and honey until light and fluffy.
Add Eggs and Vanilla
Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
Combine Mixtures
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Fold in Optional Ingredients
If using, gently fold in the chopped nuts and dried fruits until evenly distributed.
Baking
Prepare the Baking Sheet
Line a baking sheet with parchment paper or lightly grease it.
Scoop the Dough
Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each.
Bake
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
