Homemade Corn Tortillas

    Prepare the Dough

    In a mixing bowl, combine masa harina and salt. Gradually add warm water, mixing with your hands until a dough forms. Knead for a minute until smooth.

    Form the Tortillas

    Divide the dough into 8 equal balls. Flatten each ball with a tortilla press or rolling pin into thin circles.

    Cook the Tortillas

    Heat a skillet over medium-high heat. Cook each tortilla for about 1 minute on each side until lightly browned and cooked through. Keep warm in a clean towel.

For the Dish

    Cook the Bacon

    In a skillet, cook the bacon slices over medium heat until crispy. Remove and drain on paper towels.

    Make the Tomatillo Salsa

    In the same skillet, add chopped tomatillos and jalapeño. Cook for about 5-7 minutes until softened. Blend with chopped onion and cilantro until smooth. Season with salt to taste.

    Fry the Eggs

    In the skillet, reduce the heat to medium and crack the eggs into the pan. Fry until the whites are set but the yolks are still runny, about 3-4 minutes.

    On each tortilla, layer crispy bacon, a fried egg, tomatillo salsa, diced avocado, crumbled queso fresco, and sprinkle with extra cilantro. Season with salt and pepper to taste.
