Grilled Branzino

Prepare the Branzino
Clean the Branzino thoroughly, removing any scales and innards. Pat dry with paper towels.

Confit Jerusalem Artichokes

Prepare the Artichokes
Scrub the Jerusalem artichokes under running water to remove dirt. Slice them into thin rounds.

Combine Ingredients
In a saucepan, combine the sliced artichokes, garlic cloves, thyme sprigs, olive oil, and salt. Ensure the artichokes are fully submerged in oil.

Confit the Artichokes
Heat the saucepan over low heat and let it simmer gently for about 30-40 minutes until the artichokes are tender but not falling apart. Drain and set aside.

Combine the Salad
In a large bowl, toss the carrot strips with the dressing and finely chopped chives until evenly coated. Let it sit for 10 minutes before serving.
Black Olive Tapenade

Prepare Ingredients
In a food processor, combine black olives, capers, and garlic clove.

Blend the Tapenade
Pulse the ingredients while gradually adding olive oil and lemon juice until a coarse paste is formed. Adjust seasoning with salt if necessary.

Transfer the tapenade to a bowl and serve alongside the grilled Branzino and salad.
