Preparing the Chimichurri Sauce

    Make the Chimichurri

    In a medium bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well until all ingredients are thoroughly combined. Set aside to let the flavors meld.

Cooking the Steak

    Season the Steak

    Pat the flat iron steak dry with paper towels. Rub both sides with olive oil, salt, and black pepper. Let it sit at room temperature for about 15-20 minutes.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Once hot, place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest the Steak

    Remove the steak from the grill and let it rest for at least 5 minutes before slicing. This allows the juices to redistribute throughout the meat.

Making the Salad

    Prepare the Salad

    In a large bowl, combine the thinly sliced heirloom radishes and heirloom fennel. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss gently to combine.

Serving

    Plate the Dish

    Slice the rested steak against the grain. Serve the steak on a plate with the heirloom radish and fennel salad on the side. Drizzle chimichurri sauce over the steak or serve it on the side for dipping.
